The ultimate Easter chocolate cheesecake — a rich, creamy no-mixer Basque recipe with a molten chocolate center and silky ganache topping. Ready in under 30 minutes of prep.
This chocolate Basque cheesecake is the dessert your Easter table deserves. No mixer, no water bath, no fuss — just a bowl, a whisk, and 7 simple ingredients.
Ingredients
Cheesecake
- 700g full-fat cream cheese (room temperature)
- 200g sugar
- 20g cocoa powder
- 10g cornstarch
- 4 large eggs
- 200g dark chocolate (60–70%), melted
- 360g heavy cream
Chocolate Ganache
- 200g heavy cream
- 200g dark chocolate
- 10g unsalted butter
Finishing
- Cocoa powder for dusting
Instructions
- Line a round pan with parchment paper (let the edges overhang).
- Beat cream cheese with sugar in two batches until smooth — no mixer needed, just a whisk.
- Sift in cocoa powder and cornstarch. Mix until combined.
- Add eggs one at a time, mixing gently after each.
- Pour in melted dark chocolate. Stir until fully incorporated.
- Add heavy cream and mix until the batter is silky and uniform.
- Pour batter into the lined pan.
- Bake at 220°C (430°F) for 23–27 minutes — the top should be deeply dark and caramelized, edges set, and the center should jiggle like thick custard.
- Let cool completely. The center will sink slightly — that's perfect.
- Refrigerate for at least 6–8 hours (overnight is best).
Chocolate Ganache
- Heat 200g heavy cream until just steaming (don't boil).
- Pour over 200g chopped dark chocolate. Let sit 1 minute, then stir until glossy.
- Add 10g butter and stir until smooth.
- Spoon ganache over the center of the chilled cheesecake. Spread gently.
- Dust with cocoa powder. Slice and serve cold.
Pro Tips
- Use room-temperature cream cheese — cold cream cheese = lumps.
- Don't overmix after adding eggs — you want minimal air bubbles.
- The jiggle test is everything: if the center doesn't wobble, you've overbaked.
- Overnight chill is non-negotiable — the texture transforms completely.
